A confident secure giant is least likely to bite. Biting is more out of a self-defense and self-preservation, their defense mechanism. Early socialization will make them secure in different situations is what will allow them to easily accept strangers. A dog that is secure will look at new situations with curiosity rather than fear them. It all starts when they are pups. You be the boss it takes the pressure off of pup having to protect itself. You be the protector when they are young. This way they can relax. They will not see you as their protector if you are not firm or alpha in your behavior. Allow your giant to meet and greet new people as often as possible. Keep it a good experience. A Nice loose lead, very relaxed. If you are nervous the dog will know and wonder what is making you nervous. This will make your pup nervous.
